Olivier Lapôtre loves his trade and it shows
He knows how to let you share his passion for the cooking of a region rich
in products created by a landscape that is as lively as it is diverse since
the Vosges prides itself on a particularity that few other regions are able
to match: its a region with many facets made up of mountainous areas, forests,
plains and watery landscapes.
Each season the menu changes according to
the market
• Fruits, jam and honey: bilberry tarts, dandelion flower jam, elderberry
jelly...sweets made using honey, blackberries, raspberries, fir tree buds,
jams made from plums, mirabelle, brimbelle, jelly made from quinces, blackcurrants
or redcurrants,
• “Eau de Vie” spirits: bilberry, questche, Poire Williams,
holly berries, “alizier”, raspberry, mirabelle, gentian and apple,
wild rose, elderberry, fir tree liqueur and of course Kirsch (alcohol distilled
from cherries)
